I think your extracurricular ideas are great. However, I would say leadership goals are much more important when it comes to clubs. Founding or leading a club is in Tier 2 of extracurriculars according to Collegevine, which can be impressive. If you want to lead a club, I suggest you first join in a club run by some of the older kids and try learning from them in how they organize a club. If that doesn't seem appealing to you, joining your favorite clubs are totally fine, but it would be better if you showed that you dedicated a lot of your time to the club you are passionate about and actually achieved something.

For volunteering work, strive for unique projects. Again, time is also an important factor. Try aiming for 100+ hours for each project. You can also tie volunteer work with clubs, such as founding a community service club that your school doesn't have. You have to prove that your volunteering work has great impact on your community in order to stand out.

I'm not very athletic either, and that when I have aim for other goals. Do you have any other extracurricular activities like instrument playing, dancing, acting, etc.? If yes, definitely join some competitions, take some exams, and make that part of your resume. If not, it is totally fine. There are many other options like internships, research, and academic competitions. Academics can also be part of your extracurricular resume. If you are good at a subject, try pursuing more in that field. Like if you are good at math, take the AMC 10/12, and qualifying for AIME would make a lasting impression on admission officers.

For me, extracurriculars don't worry me that much. You definitely have to have something there, but academics are the most important thing. Get your GPA up, take a lot of AP classes and exams, have a high SAT score (if applicable). If you have excellent grades and some significant extracurriculars, a lot of great colleges will definitely want you.
